McGarrett “ Whole Oat Groats ”As desired
Thai garlic1 tsp (for rice) + 1 tbsp (for stir-fry)
Fermented shrimp paste (kapi)1 tsp
Palm sugar1 ladle
White pepper (crushed)1–2 tsp
Coriander roots3 roots
Soy sauce (light) 1 tsp
Fish sauce 2 tbsp (for rice) + 1 tbsp (for pork)
Dark soy sauce 1 tbsp
Long beans To taste
Shallots To taste
Red bird’s eye chili To taste
Cucumber To taste
Green mango (shredded) To taste
Chinese sausage (kun chiang) To taste
Dried shrimp To taste
Eggs 2
Lime To taste

Trick And tips

Tip 1Pan-fry Chinese sausage with a little water instead of oil for a crisp, less greasy texture.
Tip 2Use the leftover oil from frying shrimp to stir-fry the rice for added flavor.

How to make it

  • Step 1

    Cook the Oats:
    Rinse 1 cup of McGarrett oats thoroughly. Cook using 2 parts water to 1 part oats until soft.
  • Step 2

    Prepare the Sweet Pork (Moo Wan):
    • Pound coriander roots and crushed white pepper.
    • In a pan, add 1 tbsp oil, followed by the pounded coriander root.
    • Add 1 ladle of palm sugar and stir until it melts.
    • Add sliced pork and season with:
      • 1 tsp light soy sauce
      • 1 tsp seasoning powder
      • 1 tbsp dark soy sauce
      • 1 tbsp fish sauce
      • Another 1 tbsp light soy sauce
    • Simmer on low heat until thick and glossy.
  • Step 3

    Prepare the Sides:
    • Slice Chinese sausage and pan-fry with a little water until golden and cooked.
    • Make a thin omelet with 2 eggs, roll, and slice into strips.
    • Shred green mango. Slice cucumber, shallots, and red chilies.
    • Pound or chop dried shrimp lightly. Set aside.
  • Step 4

    Fry the Rice with Shrimp Paste:
    • In a pan, heat 1 tbsp oil and fry dried shrimp until fragrant. Remove and reserve for topping.
    • In the same oil, sauté 1 tsp chopped garlic.
    • Add 1 tsp fermented shrimp paste and stir.
    • Season with 2 tbsp fish sauce and 1 tsp seasoning powder.
    • Add 2 ladles of cooked McGarrett oats and stir-fry
  • Step 5

    Serve:
    Plate the fried oats in the center. Arrange sweet pork, Chinese sausage, omelet strips, shredded mango, long beans, cucumber, shallots, red chili, and dried shrimp around the plate. Garnish with lime.

    Prepare the pineapple:
    Cut off the peel, carve deep to remove the eyes, then scrape and cut the flesh into small bite-sized chunks. Set aside.

    Prepare Nam Pla Prik (Chili Fish Sauce):
    Slice prik jinda and prik kee noo, lightly crush garlic, add to a small bowl. Squeeze lime juice and mix with 2 tbsp fish sauce. Set aside.

    Measure 1 cup of McGarrett oats. Rinse thoroughly like rice. Use a 2:1 water-to-oats ratio and cook until soft.
